A word about essential oil quality for cooking. I only use doTERRA's essential oils in foods and drinks. Most essential oils on the market are crap. Most also say not to ingest them which we know means they are not pure. Essential oils are in our spices and if you use it as a spice, you should be able to use it in cooking. Essential oils are very powerful, so a tiny bit goes a long way. If you find 1 drop here is too much ginger, try a toothpick dipped into the orifice reducer and then swirled in your sauce. 1 drop of Ginger is equal to 3/4 teaspoon of ginger. 1 drop of Lemon essential oil is equal to 1 teaspoon of lemon zest.
Veggie Seaweed Wraps
Ingredients
4 Nori Seaweed Sheets
1- Small Cucumber, thinly sliced
1/4 head small Red Cabbage, very thinly sliced
1- large Carrot, peeled and shaved
1- small Summer Squash, thinly sliced
1- large ripe Avocado, pitted, peeled, and sliced
Sesame Seeds
Spicy Ginger Essential Oil Tahini Sauce
Ingredients
2 - Tablespoons Lemon juice
1 1/4 - Tablespoons Miso, chickpea or red
1- Tablespoon Raw Tahini
2 - Dates, pitted
1- Garlic Clove, minced
1/4 - teaspoon crushed Red Pepper Flakes
1 drop Ginger essential oil
2 drops Lemon essential oil (optional)
Water - enough to thin
Make Veggie Wraps:
Place the nori sheets on a flat surface. Divide the cucumber, cabbage, carrot, summer squash, and avocado among the sheets. Top each pile of vegetables with a heaping Tablespoon of the Spicy Tahini Sauce and roll up the seaweed wrap around using a wet finger to seal the edge. Then sprinkle the open side with sesame seeds.
Make the Tahini Sauce:
Combine all of the ingredients except the water in a high-speed blender. Blend, adding water 1 teaspoon of water at a time tell the sauce is the right consistency. You’re looking for a thin sauce.
